01 - 180 g fine bulgur wheat

02 - 60 g fresh parsley, finely chopped
03 - 15 g fresh mint, finely chopped

04 - 2 medium ripe tomatoes, diced
05 - 1 medium cucumber, diced

06 - 60 ml extra virgin olive oil
07 - 30 ml fresh lemon juice

# Detailed Directions:

01 - Rinse the bulgur wheat under cold water, then soak in warm water for 30 minutes. Fluff with a fork to separate the grains.
02 - Wash and finely chop the fresh parsley and mint while the bulgur soaks.
03 - Dice the tomatoes and cucumber into small, even pieces.
04 - In a large bowl, mix the soaked bulgur with the chopped herbs, tomatoes, and cucumber. Drizzle the olive oil and lemon juice over the mixture, then gently toss to combine.
