Summer Fruit Blend (Print)

A cool summer combo of watermelon, peaches and feta with zingy dressing that brings together sweet fruit and savory cheese perfectly.

# Ingredients:

→ Salad

01 - 1 sheet of fresh feta cheese, diced into ½-inch chunks (about ½ cup once diced)
02 - 3 Persian cucumbers, chopped into ½-inch thick slices
03 - Kosher salt and cracked black pepper, as needed
04 - 4 tablespoons of torn fresh mint leaves, plus extra for decoration
05 - 2 yellow peaches, cut into wedges
06 - 1 small seedless watermelon, scooped into melon balls or chopped into 1-inch chunks
07 - 1 shallot, minced finely
08 - 2 tablespoons of olive oil

→ Vinaigrette

09 - 1 shallot, chopped finely
10 - 1 teaspoon of dried oregano
11 - 3 garlic cloves, minced
12 - Kosher salt and cracked black pepper, as needed
13 - 3 tablespoons of red wine vinegar
14 - 4 tablespoons of olive oil

# Steps:

01 - In a big bowl, toss together watermelon, minced shallots, and torn mint leaves with olive oil. Sprinkle with salt and pepper, mix, and then chill it in the fridge for at least an hour or up to 3 hours.
02 - Take the chilled watermelon mixture out of the fridge. Gently fold in the peaches, cucumbers, and feta chunks. Carefully transfer everything onto a serving plate.
03 - Mix up the vinaigrette ingredients in a little bowl using a whisk. Pour the dressing over the salad and season it more if needed.
