Spread butter on one side of each sourdough bread slice. On the unbuttered side of one slice, layer with half of the cheddar cheese, distribute the crumbled cooked bacon if using, and gently spread the guacamole evenly. Sprinkle with crumbled tortilla chips if desired, then place the remaining cheese on top. Cover with the second bread slice, buttered side facing outward.

Heat a non-stick pan over medium heat. Once hot, add the assembled sandwich and grill for 2 to 3 minutes per side, pressing down lightly with a spatula to ensure even browning, until the bread is golden and the cheese melts.
