Add pitted Medjool dates to the processor and blend until a cohesive paste forms.

Add grated carrots, ground flaxseed, vanilla extract, cinnamon, nutmeg, ginger, salt, and shredded coconut. Pulse until incorporated, scraping down the sides as needed.

Divide the mixture into 12 portions. Gently roll each portion between your palms to form compact balls.

If desired, roll each ball in additional shredded coconut for an exterior coating.

Place energy balls on parchment paper and refrigerate for at least 30 minutes to allow them to firm up.
