Carrot Cake Energy Balls (Print)

No bake snacks with carrots, nuts, and dates. Perfect for healthy, quick breakfasts or nutritious snacks anytime.

# Ingredients:

→ Base

01 - 200 grams rolled oats
02 - 100 grams finely grated carrots
03 - 100 grams Medjool dates, pitted

→ Nuts and Seeds

04 - 50 grams walnuts
05 - 14 grams ground flaxseed

→ Flavoring and Coating

06 - 20 grams shredded coconut, plus extra for coating
07 - 5 millilitres vanilla extract
08 - 2 grams ground cinnamon
09 - 0.5 grams ground nutmeg
10 - 0.5 grams ground ginger
11 - Pinch of salt

# Steps:

01 - Add rolled oats and walnuts to a food processor. Pulse until finely ground.
02 - Add pitted Medjool dates to the processor and blend until a cohesive paste forms.
03 - Add grated carrots, ground flaxseed, vanilla extract, cinnamon, nutmeg, ginger, salt, and shredded coconut. Pulse until incorporated, scraping down the sides as needed.
04 - Divide the mixture into 12 portions. Gently roll each portion between your palms to form compact balls.
05 - If desired, roll each ball in additional shredded coconut for an exterior coating.
06 - Place energy balls on parchment paper and refrigerate for at least 30 minutes to allow them to firm up.

01 - For optimal texture, use a food processor. A blender may be used in small batches, but results may vary.
02 - Store energy balls in an airtight container in the refrigerator for up to one week.
