Cinnamon Roasted Sweet Potatoes Apples (Print)

Oven-roasted sweet potatoes and apples with maple syrup, cinnamon, and pecans create an irresistible side.

# Ingredients:

01 - 2 large sweet potatoes, peeled and cut into 2.5 cm cubes
02 - 2 large apples, peeled, cored, and cut into 2.5 cm cubes
03 - 60 ml olive oil
04 - 2 tablespoons pure maple syrup
05 - 1 teaspoon ground cinnamon
06 - 0.5 teaspoon ground nutmeg
07 - 0.5 teaspoon ground ginger
08 - 0.5 teaspoon salt
09 - 0.25 teaspoon ground black pepper
10 - 60 g chopped pecans (optional)
11 - 60 g dried cranberries (optional)

# Steps:

01 - Preheat oven to 200°C and line a large baking sheet with parchment paper.
02 - Place sweet potato and apple cubes in a large mixing bowl.
03 - In a small bowl, whisk together olive oil, maple syrup, ground cinnamon, nutmeg, ginger, salt, and black pepper until cohesive.
04 - Pour the spiced oil mixture over the sweet potatoes and apples, tossing thoroughly to ensure even coverage.
05 - Spread the coated mixture in a single layer on the prepared baking sheet.
06 - Roast in the preheated oven for 25–30 minutes, stirring once halfway, until sweet potatoes are tender and edges are caramelised.
07 - If desired, sprinkle chopped pecans and dried cranberries over the mixture during the last 5 minutes of roasting.
08 - Remove from oven, allow to cool for 5 minutes, then serve warm.

01 - For even roasting, ensure sweet potatoes and apples are cut into uniform cubes.
02 - To introduce a subtle heat, consider adding a pinch of cayenne pepper.
03 - Complements pork chops or roasted poultry, especially during autumn months.
