Preheat oven to 200°C and line a large baking sheet with parchment paper.

Place sweet potato and apple cubes in a large mixing bowl.

In a small bowl, whisk together olive oil, maple syrup, ground cinnamon, nutmeg, ginger, salt, and black pepper until cohesive.

Pour the spiced oil mixture over the sweet potatoes and apples, tossing thoroughly to ensure even coverage.

Spread the coated mixture in a single layer on the prepared baking sheet.

Roast in the preheated oven for 25–30 minutes, stirring once halfway, until sweet potatoes are tender and edges are caramelised.

If desired, sprinkle chopped pecans and dried cranberries over the mixture during the last 5 minutes of roasting.

Remove from oven, allow to cool for 5 minutes, then serve warm.
