Set oven to 200°C and allow to fully preheat before proceeding.

In a large mixing bowl, toss the halved Brussels sprouts with minced garlic, olive oil, salt, and black pepper until well coated.

Distribute the Brussels sprouts mixture in a single, even layer on a rimmed baking sheet.

Roast in the preheated oven for 20–25 minutes, turning once, until Brussels sprouts are golden brown and tender.

Remove tray from oven, evenly sprinkle grated Parmesan cheese over Brussels sprouts.

Return baking sheet to oven and roast for a further 5 minutes, until cheese is melted and lightly golden.

Transfer to a serving dish and serve warm.
