Grilled Mango Pineapple Chicken (Print)

Tender chicken paired with caramelized mango, pineapple, and fresh salsa for a bright, tropical-inspired meal.

# Ingredients:

→ For the Chicken

01 - 4 boneless, skinless chicken breasts
02 - 2 tablespoons olive oil
03 - 1 teaspoon ground cumin
04 - 1 teaspoon paprika
05 - 1 teaspoon salt
06 - 0.5 teaspoon freshly ground black pepper
07 - 1 tablespoon honey

→ For the Mango Pineapple Salsa

08 - 1 ripe mango, diced
09 - 1 cup fresh pineapple, diced
10 - 2 tablespoons fresh cilantro, chopped
11 - 2 tablespoons fresh lime juice

# Steps:

01 - Heat the grill to medium-high temperature.
02 - Place chicken breasts on a cutting board and trim excess fat with a sharp knife.
03 - Coat the chicken breasts with olive oil on both sides. Sprinkle the ground cumin, paprika, salt, and black pepper evenly on each breast. Rub the seasoning gently to ensure thorough coverage.
04 - Place the seasoned chicken on the preheated grill. Cook for 6–7 minutes per side until grill-marked and the internal temperature reaches 74°C.
05 - While the chicken grills, dice the mango and pineapple into uniformly sized pieces. Combine in a mixing bowl. Add chopped cilantro and fresh lime juice, then stir gently to blend.
06 - Remove chicken from the grill and allow it to rest for 3–5 minutes to retain juiciness.
07 - Arrange chicken breasts on serving plates. Spoon the prepared mango pineapple salsa generously over each piece. Serve immediately.

# Additional Notes:

01 - For deeper flavor, marinate chicken in olive oil, cumin, paprika, salt, pepper, and honey for a minimum of 30 minutes prior to grilling.
02 - Substitute honey with agave syrup or brown sugar to adjust sweetness as desired.
03 - To add a spicy element, mix finely diced jalapeño into the mango pineapple salsa.
04 - Always preheat the grill to ensure even cooking and prevent sticking.
05 - Rest grilled chicken before slicing or serving to preserve tenderness and moisture.
