PB Cookie Sandwiches (Print)

Tender peanut butter cookies featuring the traditional fork marks, joined together with a decadent, smooth peanut butter middle layer.

# Ingredients:

→ Cookie Dough

01 - 1 cup peanut butter, smooth and creamy
02 - 1 large egg
03 - ½ tsp salt
04 - ¾ cup unsalted butter, let it soften
05 - ½ cup packed brown sugar
06 - ½ cup white sugar
07 - 1 tsp vanilla
08 - 1 ½ cups plain flour
09 - ½ tsp baking soda

→ Filling Mix

10 - 2 tbsp unsalted butter, softened
11 - ¾ cup peanut butter, smooth
12 - 1 ½ cups powdered sugar
13 - 1 tsp vanilla

# Steps:

01 - Crank your oven up to 350°F (175°C) and line a couple of baking trays with parchment paper.
02 - Grab a medium bowl. Whisk together the salt, baking soda, and flour, then leave it aside for later.
03 - In a bigger bowl, beat the soft butter, brown sugar, white sugar, and peanut butter until it's a creamy dream.
04 - Beat in the egg and vanilla until smooth. Slowly stir the flour mix into this until it's just blended.
05 - Scoop the dough into tablespoon-sized balls, roll them smooth, and spread them out on the lined baking trays. Squish each one gently with a fork to make a criss-cross top.
06 - Bake the cookies for roughly 10-12 minutes. Let them chill out on the baking tray for 5 minutes before moving them to a cooling rack.
07 - In a bowl, whip together the peanut butter, powdered sugar, soft butter, and vanilla until it turns smooth and spreadable.
08 - Once cooled, spread some filling on the flat side of one cookie and stick it to another cookie to make a sandwich.
09 - Keep these cookie sandwiches in a sealed container at room temperature.

# Additional Notes:

01 - Soft butter and peanut butter mix better, so don't skip letting them come to room temp.
02 - Toss a pinch of salt into the filling mix for a boost of flavor.
03 - If the dough feels sticky, chill it in the fridge for half an hour before rolling.
