Combine diced strawberries and unsweetened applesauce in a blender. Process at high speed until completely smooth and uniformly colored.

Transfer the strawberry-applesauce puree to a large heatproof mixing bowl. Sprinkle gelatin powder evenly over the surface and whisk thoroughly until fully blended. The mixture will thicken.

Set the bowl over a saucepan with gently simmering water, ensuring the base does not touch the water. Stir gently until the gelatin dissolves and the mixture is warm, fluid, and lump-free. Do not allow to boil. Remove from heat and let cool at room temperature for 10 minutes.

Pour the cooled mixture into a stand mixer bowl fitted with a wire whisk attachment. Whisk on maximum speed for approximately 15 minutes until the volume quadruples and an airy, whipped-cream-like texture forms. The mixture should hold soft peaks.

Transfer the whipped mixture to the prepared pan. Use a spatula to spread evenly and smooth the surface. Refrigerate for a minimum of 1 hour to set.

Store chilled until ready to serve. Slice with a large, sharp knife. Optionally decorate with whipped cream or preferred frosting. Refrigerate leftovers.
